So many of you have been on the rice paper kick with me, and I love it. If you’re already there, this one’s for you. If you’re not yet, consider this your official invitation.

Burgers bring elite end of week energy. Rice paper brings the crunch. So obviously I smashed them together.

These Big Mac style spring rolls are cheesy, beefy, pickle-y, and super snackable. They’re the kind of thing you make while the oven preheats and you’re already thinking about what sauce you’re dunking them in. Eat one, then immediately go back for another.

Rice paper is such a fun ingredient to play with. It gets ultra crispy, it’s easy once you get the hang of it, and it’s naturally gluten free.

Why these cheeseburger spring rolls work

Egg dipped rice paper bakes up crisp and golden without deep frying. Seasoned ground beef and mozzarella bring classic cheeseburger flavor in every bite. Pickles and onion cut through the richness and keep the filling from tasting heavy. Rolling them tightly helps them cook evenly and keeps the filling locked in.

Cheeseburger Spring Rolls

Crispy cheeseburger spring rolls made with rice paper, seasoned beef, mozzarella, onion, and pickles. Snackable, gluten free, and perfect for dipping.

Servings: 5 spring rolls

Ingredients
  

  • 5 rice paper sheets
  • 2 eggs whisked
  • 1 cup ground beef cooked
  • 1 cup shredded mozzarella
  • ¼ cup onion finely diced
  • ¼ cup pickles finely diced
  • Sesame seeds for topping
  • Paprika to taste
  • Garlic powder to taste
  • Salt and pepper to taste

Method
 

  1. Preheat the oven or air fryer to 400°F (205°C). Line a baking sheet with parchment paper if baking.
  2. Whisk the eggs on a shallow plate. Dip one rice paper sheet into the egg wash for a few seconds, just until pliable. Lay it flat on a lightly oiled cutting board.
  3. Across the lower third of the rice paper, add the cooked ground beef and season lightly with salt, pepper, paprika, and garlic powder. Top with mozzarella, onion, and pickles.
  4. Fold in the sides, then roll tightly into a spring roll shape.
  5. Brush lightly with more egg wash and sprinkle with sesame seeds.
  6. Bake or air fry for 15 to 20 minutes, flipping once if needed, until golden and crisp.
  7. Serve hot with a delicious punchy burger sauce for dipping.

Notes

  • Dip the rice paper just until it softens. Too long and it can get fragile and tear.
  • Let the beef cool slightly before assembling so the rice paper stays easy to handle.
  • Roll tight and place seam side down so they stay sealed and crisp evenly.
  • Pro move: Dunking these into my punchy burger sauce. Game over.

    1. Hi Bunny, you sure can. Bake or air fry works for these. The convection setting on the oven will help make sure they get crispy!
