I’m love messing around with simple ingredients in my kitchen. Tortillas are often a primary culprit. They crisp up beautifully in the oven and somehow manage to hold fillings in ways that bread or dough never quite can.
This recipe started as a simple idea: what if pull-apart garlic bread and pizza night collided? Instead of making dough, I folded tortillas accordion-style and packed them tightly into a baking dish. That creates layers and pockets everywhere.

Once the sauce, pepperoni, and cheese get pushed into those folds, great things happen in the oven. The top becomes bubbly and golden, the edges turn crisp, and inside each layer you get little saucy pizza pockets that pull apart with melted cheese stretching between them.

Pull-Apart Tortilla Pizza Bread

Ingredients
- 6 tortillas medium-size, flour
- 1 cup pepperoni slices
- 1 tablespoon Olive oil (or a generous drizzle)
- 1 cup marinara sauce
- 1 cup shredded mozzarella
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt
- 1 tablespoon Optional: red pepper flakes
Instructions
Preheat:
- Set oven to 375°F.
Fold the tortillas:
- Fold the tortillas back and forth accordion-style and pack them snugly into a greased 8x8 baking dish to create tight layers.
Add the pepperoni:
- Slide pepperoni slices into the folds so they sit inside the layers rather than only on top.
Oil the tortillas:
- Drizzle olive oil over the entire dish, letting it run down into the folds to help the edges crisp.
Add the sauce:
- Spoon marinara over the tortillas and use the back of a spoon to push it into the folds and pockets.
Add cheese and seasoning:
- Sprinkle mozzarella evenly over the top. Finish with Italian seasoning, a pinch of salt, and red pepper flakes if using.
Bake:
Optional broil:
- Broil for the final 2 to 3 minutes if you want extra crisp edges.
Rest and serve:
- Let it rest for about 5 minutes, then pull apart and serve warm.
