Croque Madame is already one of the best sandwiches ever invented.

Ham. Cheese. Dijon. Toasted bread. What’s not to love?

But if you’ve been following along here, you know I’ve been on a bit of a rice paper kick lately. Once you realize how crispy rice paper gets in the oven or air fryer, it opens up a whole new category of recipes.

So I started wondering what would happen if I turned a croque madame into a rice paper pocket.

The result is kind of ridiculous.

The outside turns shatteringly crisp and the center stays soft and cheesy. The egg on top bakes until the white is set and the yolk stays jammy.

And the everything bagel seasoned crust? That part might be my favorite.

Double-layered rice paper creates structure and crunch. Egg wash softens the rice paper and helps seasoning stick. High heat crisps the rice paper quickly before the filling overcooks. The open center lets the egg cook directly into the parcel.

Crispy Rice Paper Croque Madame Pockets with Jammy Egg

Ingredients

  • 4 rice paper sheets
  • 2 eggs whisked well (for dipping)
  • 2 tablespoons everything bagel seasoning divided
  • 2 tablespoons Dijon mustard
  • 2 slices white cheese of choice Gruyère, Havarti, Swiss, mozzarella, or aged cheddar
  • 6 thin slices Black Forest ham
  • 2 whole eggs for topping
  • Oil spray or light brush of oil
  • Pinch salt and black pepper

Instructions

  • Preheat: Preheat oven or air fryer to 425°F with convection or fan if possible.
  • Season base: Sprinkle about 1 tablespoon everything bagel seasoning in a square slightly larger than a rice paper sheet.

  • Dip: Dip 1 rice paper sheet into the whisked eggs for 2 to 3 seconds and place it directly onto the seasoning.

  • Stack: Dip a second rice paper sheet and place it directly on top of the first.
  • Spread Dijon: Spread about 1 tablespoon Dijon mustard in the center, leaving space around the edges.

  • Add cheese: Place 1 slice of white cheese on the Dijon.

  • Fold parcel: Fold the four corners inward about ¾ inch toward the center to form a neat square parcel. Do not fully overlap.
  • Add egg: Transfer to oiled parchment or an air fryer basket and crack 1 whole egg directly on top of the ham in the center.

  • Season: Sprinkle extra everything bagel seasoning and a small pinch of salt and pepper.

  • Repeat: Build the second parcel the same way.
  • Cook: Bake or air fry for 10 to 14 minutes until the rice paper is deeply golden and crisp and the egg whites are set.

Notes

  • High heat is key. Rice paper crisps best above 400°F.
  • Convection or an air fryer dramatically improves crunch.
  • If your egg spreads too much, lightly nest it into the ham before baking.
  • For extra crisp edges, lightly spray the rice paper with oil before cooking.
