Most people think of rice paper as the thing you wrap fresh spring rolls in.

That’s where I started too. But one day I threw a sheet into the oven and realized something interesting happens when it cooks with a little heat and airflow. It tightens, blisters, and turns into a thin, crispy shell.

Once I saw that, the ideas started stacking up quickly.

Breakfast sandwiches wrapped in rice paper. Pizza spiraled inside it it. Spirals packed with fillings that bake into something crunchy on the outside and melty in the middle.

After a while I realized I had accidentally built a whole lineup of crispy rice paper recipes using the same trick. So I pulled together my favorites into a list so that you can try them all too.

If you’re new to cooking with rice paper, this is a great place to start!

Why Rice Paper Works So Well

Rice paper might look delicate, but it behaves completely differently once it hits heat.

It crisps beautifully
When brushed with egg or oil and cooked in a hot oven or air fryer, rice paper turns golden and crunchy. The edges blister slightly and create a texture that’s closer to a thin pastry than a wrapper.

It’s naturally gluten free
Rice paper is made from rice flour and water, which makes it a great option for anyone avoiding wheat or looking for gluten-free alternatives to wraps or dough.

It cooks fast
Because the sheets are so thin, most rice paper recipes cook in 10 to 20 minutes.

It works with almost anything
Breakfast fillings, sandwiches, dumplings, pizza-style toppings. If it tastes good inside a wrap or pastry, it probably works with rice paper.

Tips for Getting Rice Paper Crispy

A few small techniques make a big difference.

Don’t over-soak: A quick dip in water or egg wash is all you need. Too much moisture can soften the wrapper.

Use high heat: Rice paper crisps best at 375–425°F in the oven or air fryer.

Fan or convection helps: Moving air helps dry the surface quickly so it blisters instead of steaming.

Let it rest briefly after cooking: The structure firms up slightly as it cools, which makes slicing easier.

Rice paper has become one of my favorite ingredients to experiment with because it’s simple, gluten free, and turns incredibly crispy with almost no effort.

Once you try one of these recipes, you’ll start seeing how many directions you can take it. Breakfast fillings, sandwich-inspired spirals, dumplings, even pizza-style builds.

And I’m definitely not done with this lineup yet!

Frequently Asked Questions about Crispy Rice Paper Recipes

Can rice paper go in the oven?

Yes. Rice paper crisps extremely well in a hot oven or air fryer. High heat helps dry the wrapper quickly so it turns golden and crunchy instead of chewy.

Is rice paper gluten free?

Most rice paper is made from rice flour and water, so it is naturally gluten free. Always check the package to confirm.

Do you need to soak rice paper first?

Usually just a quick dip is enough. Over-soaking can make it fragile.

Is rice paper better in the oven or air fryer?

Both work well. Air fryers crisp slightly faster because of the circulating heat.
