I love using tortillas as a substitute for dough, particularly when it comes to breakfast quiches or anything pizza related. Tortillas often make the dish healthier, they give you the option to choose high-protein, low-carb, or gluten-free when you want to, and maybe even more importantly, they cook fast and crisp perfectly!
This particular recipe came from messing around with healthier pizza ideas (which I do often...hello, Pizza Egg Bites, Pull-Apart Tortilla Pizza Bread, and Pepperoni Pizza with High-Protein Crust) and realizing that per usual, I didn’t feel like dealing with dough at breakfast time.
So...tortilla here we come.
The part that makes this breakfast pizza special is wrapping sausage into the edges before it goes in the oven. As it bakes, the tortilla tightens around it and turns crisp, while the sausage stays juicy, so every bite around the edge actually has some weight to it.

The center cooks in a completely different way, which is exactly what you want. The marinara warms through, the cheese melts into everything, and the eggs set right in place. If you pull it at the right time, the whites are just set and the yolk stays a little soft, so it runs into the sauce and cheese when you slice it.
It comes together quickly, but a couple small things make a big difference. Keeping the toppings balanced so the middle doesn’t get heavy, and giving the crust a quick drizzle of oil so it crisps evenly all the way around.
Once you’ve made it once, it’s an easy one to play with. Swap the sausage, change the cheese, or go heavier on the toppings depending on what you’ve got in the fridge.

Tortilla Breakfast Pizza with Sausage-Stuffed Crust

- Preheat: Preheat oven or air fryer to 425°F convection.
- Build crust: Place 3 cooked sausages around the outer edge of the tortilla.
- Build crust pt 2: Fold the edges over and secure with toothpicks to form a stuffed crust.
- Sauce: Spread 1½ tablespoon marinara sauce in the center.
- Eggs: Crack 2 eggs into the center over the sauce, spacing them slightly apart so they cook evenly. Season lightly with salt.
- Top: Add halved cherry tomatoes, ½ cup mozzarella, and a pinch of Italian seasoning.
- Finish crust: Drizzle olive oil over the edges and sprinkle with sesame seeds.
- Bake: Cook for 9–12 minutes until the tortilla is golden, cheese is melted, and egg whites are set.
- Serve: Remove toothpicks, slice, and serve immediately.
Notes
- Keep the center light so the tortilla crisps instead of softening.
- If your eggs are large, crack them into a small bowl first so you can place them cleanly in the center.
- Check early in the air fryer, it can run hotter than an oven.
- A light drizzle of oil on the crust makes a noticeable difference in color and crispness.
