Ingredients

large flour tortilla
3
breakfast sausages, cooked
2
eggs
1½
tablespoon
marinara sauce
Salt
to taste
½
cup
shredded mozzarella
Italian seasoning
to taste

Olive oil
for drizzling
White sesame seeds
Instructions
Preheat:
Preheat oven or air fryer to 425°F convection.
Build crust:
Place 3 cooked sausages around the outer edge of the tortilla.
Build crust pt 2:
Fold the edges over and secure with toothpicks to form a stuffed crust.
Sauce:
Spread 1½ tablespoon marinara sauce in the center.
Eggs:
Crack 2 eggs into the center over the sauce, spacing them slightly apart so they cook evenly. Season lightly with salt.
Top:
Add halved cherry tomatoes, ½ cup mozzarella, and a pinch of Italian seasoning.
Finish crust:
Drizzle olive oil over the edges and sprinkle with sesame seeds.
Bake:
Cook for 9–12 minutes until the tortilla is golden, cheese is melted, and egg whites are set.
Serve:
Remove toothpicks, slice, and serve immediately.
Notes
Keep the center light so the tortilla crisps instead of softening.
If your eggs are large, crack them into a small bowl first so you can place them cleanly in the center.
Check early in the air fryer, it can run hotter than an oven.
A light drizzle of oil on the crust makes a noticeable difference in color and crispness.
