I came up with this one late one night when I was craving something sweet and had absolutely no interest in turning on the oven.
We were out of ice cream. Out of chocolate. Basically out of anything that resembled dessert. I was very close to giving up when I spotted a jar of almond butter and some maple syrup in the pantry.
No plan. Just a whisk and very low expectations.
And then something kind of magical happened. After a minute or two of whisking, the mixture turned glossy and fluffy and somehow… caramel-like. Not just good. Really good. Rich, silky, and perfectly sweet.
Now it’s one of those back-pocket recipes I make all the time. Two ingredients. Two minutes. And it always feels like I pulled off something way fancier than I actually did.
Why this caramel sauce works
Whisking the nut butter with maple syrup is what makes this work. They emulsify into a smooth, glossy mixture that feels almost caramel-like, without turning on the stove.

- ½ cup nut butter peanut, almond, or cashew
- ½ cup maple syrup
Instructions
- Add the nut butter and maple syrup to a bowl.
- Whisk vigorously for about 2 minutes, until the mixture becomes smooth, glossy, and slightly fluffy.
- If the sauce feels too thick, whisk in water 1 teaspoon at a time until it reaches your desired consistency.
