I got sent home on MasterChef because I made a really shitty cheesecake. Sorry for the language, but there's no other way to put it.

How my cheesecake redemption began

It wasn't subtle. It was one of those moments where you know exactly what went wrong, and there's no chance to fix it. I was devastated.

I still had so many ideas I wanted to try in the kitchen, and I genuinely thought I had a shot at the title. Even more than that, I was having the time of my life on that show, so getting sent home like that completely gutted me. I felt like I had more to give, and I was learning a lot about myself and my cooking while I was there. If only I could stay on this ride a little longer.

I'd also made some really close friends, and I wasn't ready to go home and not cook with them every day.

That kind of thing sticks with you.

After that, cheesecake became something I kept coming back to. I couldn't let go of it. I not only wanted to make a better version than the one I made on MasterChef, but I wanted to figure out exactly what makes cheesecake work. Texture, structure, bake time, how it sets, how it slices, all of it...

Once I built my foundation of cheesecake know-how, I started simplifying the process. I strived to get rid of steps that didn't actually move the needle and focus only on the ones that did. That's the beginning of where these versions come from.

In addition to simplifying, in the last few years, I've also spent a lot of time figuring out how to health-ify some of my favorite desserts. Some people will argue good cheesecake is impossible to make "healthy", because they think that what makes it good is how indulgent it is.

I don't agree.

What makes these cheesecakes healthy?

When you learn how to use ingredients like Greek yogurt and cottage cheese properly, they don't feel like substitutes. They become the foundation. That's what opened the door to building cheesecakes that still feel rich and creamy, but are higher in protein and even gluten free.

Oh, and you know what's even better? These cheesecakes require no water bath, no fancy cooking methods.

And, here's the funny part about it all. The thing that sent me home on MasterChef more than a decade ago is now one of the recipes I get asked for the most often.

Commonly Asked Questions about my High Protein Cheesecakes

About the Cheesecakes

What makes these cheesecakes high protein?

The base for every cheesecake on this list uses cottage cheese and Greek yogurt instead of cream cheese. Cottage cheese has approximately 14g of protein per half cup compared to about 2g in cream cheese. Combined with two eggs per recipe, each slice typically delivers 12 to 17g of protein depending on the specific recipe. The protein comes from whole food ingredients rather than protein powder, which is why the texture stays creamy and the flavor stays clean.

Can I use regular flour instead of almond or oat?

Yes. Regular all-purpose flour works at the same ratio in these recipes. The texture will be very slightly different since almond and oat flour have different fat and starch profiles, but the cheesecake will still bake and set correctly. The recipes will no longer be gluten free if you use all-purpose flour. Coconut flour is not a direct substitute since it absorbs liquid at a completely different rate.

Do these cheesecakes taste like cottage cheese?

No. Cottage cheese blended completely smooth has a mild, slightly tangy flavor that essentially disappears once baked and chilled. The dominant flavors in each cheesecake come from the cocoa, pistachio, lemon, fruit, or other flavoring ingredients. Most people who try these cannot identify cottage cheese as an ingredient. The texture is dense and creamy, close to a traditional cream cheese cheesecake.

Do I need a water bath to bake these cheesecakes?

No. A water bath is traditionally used to regulate oven heat around a cream cheese cheesecake and prevent cracking. These cottage cheese-based cheesecakes don't require one. The cottage cheese and Greek yogurt base is more forgiving than cream cheese and tolerates direct oven heat without cracking, as long as you don't overbake. The jiggle test is your guide: edges set, center slightly jiggly, out of the oven.

Baking and Storage

Can I bake this in the air fryer?

Only if you can turn the fan off. Air fryer fan circulation creates uneven heat that can cause the cheesecake to set unevenly and crack on the surface. If your air fryer has a bake or oven mode that turns off the fan, that works. Otherwise stick to a conventional oven at 325°F.

Can I make these cheesecakes ahead of time?

Definitely, and they're actually better made ahead. The overnight chill is already built into every recipe, so making the day before serving is the standard approach. They keep well in the fridge for up to 5 days in an airtight container.

    So i made this but added in some chocolate protein powder and less syrup for my own taste and WOW!
    Not as fudgy as i put it into 2 cake tins so the depth wasnt quite there... but i have more portions! I would do it again in one tin to keep that wobble.
    texturally i was worried but it worked out super well and my kids that hate cheesecake devoured it! so happy i can make this regularly for an alternative to overnight oats
